Just like non-dimable CFL's don't like dimmers.
Dimmers are Phase controlled Triacs, they need constant load (read
resistive load) to keep conducting thru the AC cycle.
CFL's and LED bulbs don't provide a constant load to keep the dimmer
happy. But one bulb would be enough to do the trick.
Perhaps a Low voltage DC setup would work better.

Do you have any specific product to recommend that works with LED bulbs?
