2001 - Why are time intervals specified, for : oil & filter, inverter
& engine coolants, changes ? ... And, onlt 2 years for the coolants ..

And for the oil & filter it's 6 months; so if I fill with fresh oil,
and don't drive the car for 6 months, the un-used oil then needs
changing ?!

Yes, and it is because of the additive packages wearing out.

In the case of coolant they are trying to control the corrosive properties
of water with anti-corrosion additives, and those additive chemicals get
used up as they do their job eventually allowing corrosion to occur.

In the case of oil the time limit is added for those that don't drive long
enough each time to get the oil good and hot and drive (boil) off collected
moisture, even when the car sits undriven temperature changes make the
crankcase breathe and collect some moisture.
